the syrup started as a dripping maple tree next to the driveway (see previous maple tree post).
it was pretty much water. tons and tons of water.

but hours of boiling and simmering later, it reduced down to brown water...
and then thick brown water....
and then, after a bit of straining, it just turned into syrup. just delicious, perfect, grade A amazing syrup.
we had pancakes and mimosas with our next door neighbors, who are the co-tree owners, and we had this syrup. after this whole process, i can tell you i will never waste another drop of syrup again.
